* 250g thin rice vermicelli noodles * 4 cups chicken or vegetable broth * 3 tablespoons tamarind paste * 3 tablespoons palm sugar or brown sugar * 1 tablespoon shrimp paste * 2 tablespoons red curry paste * 1 teaspoon turmeric powder * 1 lemongrass stalk, bruised * 4 kaffir lime leaves, torn * 1 cup bean sprouts * 1 cup chives, cut into 2-inch pieces * 1/2 cup fried shallots * 1/4 cup roasted peanuts * 1/4 cup lime wedges

Instructions for Making Mee Siam

1. Soak the rice vermicelli noodles in hot water for 10 minutes, or until they are soft and pliable. Drain the noodles and set aside. 2. In a large pot or Dutch oven, bring the chicken or vegetable broth to a boil. Add the tamarind paste, palm sugar, shrimp paste, red curry paste, turmeric powder, lemongrass, and kaffir lime leaves. Stir to combine and reduce heat to low. 3. Add the softened rice vermicelli noodles to the broth and cook for 5-7 minutes, or until they are heated through. 4. Remove the pot from the heat and stir in the bean sprouts and chives. 5. Ladle the Mee Siam into bowls and top with fried shallots, roasted peanuts, and lime wedges.

Tips for Making Mee Siam

* For a spicier Mee Siam, add more red curry paste. * If you don't have tamarind paste, you can use lemon juice or white vinegar instead. * To make the Mee Siam ahead of time, cook the noodles and broth as directed, but do not add the toppings. Let the Mee Siam cool completely, then store it in an airtight container in the refrigerator for up to 3 days.
